Abstract:
The present invention addresses the problem of providing, inter alia, a food product and a raw ingredient serving as a substitute for a raw milk ingredient, the food product and raw ingredient having an excellent milk aroma and milk flavor. The present invention relates to: an enzyme agent for improving the flavor of a vegetable oil and fat, the enzyme agent containing a lipase; an agent for improving the flavor of a food product, the agent being obtained by causing a lipase to act on a vegetable oil and fat; and a food product including the agent for improving the flavor of a food product. The present invention also relates to: a method for producing an agent for improving the flavor of a food product, the method including a step for causing a lipase to act on a vegetable oil and fat; and a method for producing a food product, the method including a step for causing a lipase to act on a vegetable oil and fat to obtain an agent for improving the flavor of a food product, and a step for obtaining a food product including the agent for improving the flavor of a food product.
