An exhaust structure and a heat exchanger. The exhaust structure comprises a first manifold (100), a gas suction pipe (200), and a liquid outlet pipe (300); the first manifold (100) is provided in the vertical direction; the liquid outlet pipe (300) is provided between the top and the bottom of the first manifold (100) and communicated with the first manifold (100); along a liquid outflow direction of the liquid outlet pipe (300), the inner diameter of the liquid outlet pipe (300) is first gradually reduced and then gradually increased; one end of the gas suction pipe (200) is provided in the first manifold (100) and extends to the top of the first manifold (100) in the vertical direction, and the other end of the gas suction pipe (200) extends to a position having the smallest inner diameter of the liquid outlet pipe (300) and is communicated with the liquid outlet pipe (300).
