Abstract:
It is intended to provide early flocculation factors contained in a brewing material, enzymatically digested products of these polysaccharides, antibodies thereto and use of the same. Early flocculation factors (factors causing early flocculation of yeast) contained in a brewing material (barley, malt, etc.) are purified and isolated. These early flocculation factors comprise polysaccharides each having a molecular weight of about 80,000 or less (estimated by referring dextran 40,000 as a standard polysaccharide in the gel filtration chromatography method), and at least containing a (→4Xyl1→) linkage xylose unit, a (→5Ara1→) linkage arabinose unit, a (→3Gal1→) linkage galactose unit, a (→6Gal1→) linkage galactose unit and a (→3,6Gal1→) linkage galactose unit. It is further intended to provide enzymatically digested products of these early flocculation factors, antibodies against these polysaccharides and method of using the same in brewing a fermented malt drink or the like.
