Abstract:
A process for hydrolyzing a triglyceride into glycerol and fatty acid comprises contacting the triglyceride and water consecutively or simultaneously with a positionally specific microbial lipase and a positionally non-specific lipase. The combination of lipases has a synergistic effect on the hydrolysis of triglycerides, so that a high degree of hydrolysis of the triglycerides can be obtained.
