Abstract:
The present invention addresses the problem of providing a food product in which an odor derived from a vegetable raw material is suppressed. The present invention relates to: a flavor-enhancing agent or water-retention-improving agent for a vegetable raw material, the agent containing a cyclodextrin-generating enzyme; and a food product obtained by causing a cyclodextrin-generating enzyme to act on a vegetable raw material. The present invention also relates to a method for producing a food product, the method including a step for causing a cyclodextrin-generating enzyme to act on a vegetable raw material.
