Abstract:
 This flour composition is obtained by heat treatment of a mixture of flour and 0.2-10 parts by mass of an emulsifier per 100 parts by mass of the flour. The emulsifier is preferably one or more selected from monoglycerin fatty acid esters and lecithin. The heat treatment is preferably treatment by heating for from 2 seconds to 3 minutes under conditions such that the temperature of the mixture is 80-120ºC. The heat treatment is preferably moist heat treatment using saturated water vapor. The method for producing a flour composition of the present invention has a heating step for applying saturated water vapor directly to a mixture of flour and emulsifier and heating the mixture, the heating step being carried out using production equipment provided with a transport path for transporting introduced raw material to an outlet and a mechanism for introducing saturated water vapor into this transport path.
