Abstract:
Provided is a means for, in a powdery food comprising a powder derived from a sucrose-containing plant, easily controlling a burnt smell originated from sucrose and eliciting the sweet flavor originated from sucrose inherent to the sucrose-containing plant. A powdery food that comprises a sucrose-containing plant, said powdery food being characterized by satisfying the following requirements (1) to (4). (1) Having a sucrose content of 2.5 mass% or more in terms of dry mass. (2) Having a dietary fiber content of 1 mass% or more in terms of dry mass. (3) After ultrasonication, having a particle diameter d50 of 1000 μm or less. (4) Having an acetoin content of 1-40000 ppb inclusive.
