Abstract:

Provided are: a food flavor-improving agent characterized by containing a polyglyceryl fatty acid ester having an HLB of at least 8; and a food containing the flavor-improving agent. It is possible to improve the sensation of taste of an oil/fat-containing food by means of this food flavor-improving agent, and it is possible to provide a food having a favorable aftertaste as well as promoting the sensation of flavor by preventing the masking of taste components by the oil and fat; thus, there is a large industrial contribution.
