Abstract:
Provided are a food product refrigeration method and a food product refrigeration device that can appropriately refrigerate a food product having a prescribed surface shape. This food product refrigeration device 1 comprises: a refrigeration tank 1 in which an ice slurry 15 is stored; a flexible film member 7 which envelops a food product 6 that is a target to be refrigerated; a placement plate 8 on which the food product 6 is placed; a placement plate lifting/lowering mechanism 9 which lifts and lowers the placement plate 8; a holding beam 10 which holds an opening 7A side of the flexible film member 7; and a holding beam movement mechanism 11 which moves the holding beam 10. The flexible film member 7 has flexibility such that the flexible film member 7, when immersed in the ice slurry 15 while enveloping the food product 6, is in a state of contacting the surface of the food product 6 due to the water pressure of the ice slurry 15. The immersion depth of the food product 6 into the ice slurry 15 is configured to be within a range at which the surface shape 20 of the food product 6 is not deformed by the water pressure acting on the food product 6 via the flexible film member 7.
