GENE CAUSATIVE OF THE AGING SMELL OF MALT DRINK AND UTILIZATION OF THE SAME

Abstract:
It is intended to provide a gene causative of the aging smell of a malt drink, which is useful in producing malt for manufacturing a malt drink having a lessened aging smell, and the utilization of the same. The gene causative of the aging smell of a malt drink as described above is a gene which encodes 9-/13-PHL protein. In a plant in which the expression of the above gene is inhibited or which carries a mutation transferred into this gene, therefore, it is possible to reduce the expression amount of the 9-/13-PHL protein or lower the activity of the 9-/13-PHL protein. By using barley as such a plant as described above, malt having a low 9-/13-PHL activity can be provided. This malt is usable in manufacturing a malt drink which has a lessened aging smell.
