Abstract:
Provided are: a γ-Glu-Val synthase suitable for producing γ-Glu-Val; and a method for producing γ-Glu-Val-Gly using said synthase. A γ-Glu-Val synthase such as a γ-Glu-Val synthase of Kocuria rosea (AJ3132), in which the ratio of γ-glutamyl-valine synthase activity to γ-glutamyl-glycine synthase activity is at least 2.0, is employed to produce γ-Glu-Val-Gly using Glu, Val, and Gly as starting materials.
