Abstract:
Provided is a low-carbohydrate candy that can be manufactured at good workability. The hard candy satisfies the following requirements (A) to (C). (A) Containing 80 mass% or more, in terms of solid matter, of a water-soluble dietary fiber. (B) Having a moisture content of less than 6 mass%. (C) Having a glass transition point of 20°C or higher.
