Abstract:
Provided is an oil-in-water type emulsified oil-and-fat composition containing water, proteins, and oils and fats, the composition being characterized in that the amount of oils and fats is 50 mass% or more when the total amount of water, proteins, and oils and fats in the emulsified oil-and-fat composition has been set to 100 mass%, the compression load of the emulsified oil-and-fat composition measured at 25 ℃ is 2.0 N or more, and 50 mass% or more of the protein materials constituting said proteins is derived from a plant protein material having all of characteristics a) through c): a) the protein content in solids is 70 mass% or more; b) NSI is 80 or more; and c) in the results of measuring the molecular weight distribution, the area ratio of 2,000 Da or more and less than 20,000 Da is 30% or more, and the area ratio of 20,000 Da or more is 70% or less.
