Disclosed in the present application are a high-resolution high-frame-rate photographing method, and an image processing apparatus. The method comprises: acquiring N photosensitive images, wherein the N photosensitive images are respectively obtained by performing N consecutive instances of exposure on a photosensitive element, a first photosensitive image among the N photosensitive images comprises P pieces of photosensitive data, and a second photosensitive image therein comprises Q pieces of photosensitive data, the P pieces of photosensitive data and the Q pieces of photosensitive data being respectively obtained by exposing P photosensitive points and Q photosensitive points, and the positions of the P photosensitive points and Q photosensitive points on the photosensitive element being different; and performing fusion processing on the N photosensitive images to obtain a third photosensitive image, wherein the third photosensitive image comprises the P pieces of photosensitive data respectively corresponding to the P photosensitive points, and the Q pieces of photosensitive data respectively corresponding to the Q photosensitive points. By means of the present application, a high-resolution high-frame-rate photosensitive image can be obtained without increasing data transmission bandwidths, thereby improving the output image quality of an electronic device.
