Abstract:
Provided is a particle measurement device which reduces the influence of fibrous chewed food particles that interfere with chewing ability evaluation. Also provided is an image processing method used for this particle measurement device. This particle measurement device comprises: an image data creation unit which deposits a dispersion of various types of particles having different sizes on a flat plate, and captures a digital image of this dispersion, thereby creating image data; and a measurement unit which measures the size of each particle using the image data created by the image data creation unit, wherein the measurement unit is provided with a noise removal process execution means and a severing process execution means. Specifically, the severing process execution means severs particles having an elongated fibrous shape into separate severed particles having a predetermined length, with the size of each separate severed particle being such as to cause the noise removal process means to determine that the particle is noise.
