Abstract:
Disclosed is a highly-functional fermentation product (a fermented food) obtained by subjecting a starting material containing fructan (in particular, a starting material comprising fructan-rich garlic (Allium sativum) or rakkyo (Allium chinense)) directly to lactic acid fermentation without conducting a heat treatment or an enzymatic treatment. Specifically disclosed are a fermentation product having an immunopotentiating effect which is obtained by lactic acid fermentation of a starting material containing fructan with the use of a lactic acid bacterium Lactobacillus plantarum S506 strain (NITE BP-643) capable of metabolizing fructan, a mutant strain of the aforesaid S506 strain that is capable of metabolizing fructan, or a strain isolated from Lactobacillus plantarum that has the same mycological properties as the aforesaid S506 strain; and a fermented food comprising the aforesaid fermentation product.
