Abstract:
Disclosed is an impregnated food processing method comprising: step S1, soaking freeze-dried fruits and vegetables in a sugar solution and vacuum drying to obtain sugar-added freeze-dried fruits and vegetables; step S2, impregnating the sugar-added freeze-dried fruits and vegetables in a permeable chocolate slurry to obtain chocolate-impregnated fruits, wherein, the permeable chocolate is a chocolate with a fineness of 15nm or less and a viscosity of 100-1000 mPa·s at 40°C or less; step S3, vacuum processing the chocolate-immersed fruits to obtain the impregnated food. The impregnated food processing method can significantly improve the product crispness and deliciousness, and can achieve dark chocolate-impregnation of the sugar-added freeze-dried fruits and vegetables to form an impregnated food impregnated with dark chocolate. Further disclosed is an impregnated food.
