Abstract:
An impregnated food wherein a solid edible material has been impregnated with a liquid-type food having a viscosity at 35oC of 10000 to 100000 mPa∙s, which has a less hard texture while sustaining the good flavor of the liquid-type food and provides a feeling of unity between the solid edible material and the liquid-type food. The aforesaid impregnated food can be produced by a method for producing an impregnated food characterized by comprising contacting the solid edible material with the liquid-type food in a closed system, pressurizing the inside of the system in said state, and then reducing the pressure in the system to the atmospheric level.
