Abstract:
It is intended to provide a fermented soymilk having an excellent flavor with lessened greenish (grassy) taste and harsh taste, which can be hardly eliminated in the conventional lactic acid-fermented soymilks, a smooth texture and a favorable feel on the palate, and a method of producing the same. This problem can be solved by carrying out lactic acid fermentation starting with soymilk which has been treated with an enzyme having a phytic acid decomposing enzyme activity to thereby give a phytic acid decomposition product. Namely, a lactic acid-fermented soymilk characterized by containing less than 1.5% by weight of phytic acid based on soybean-origin proteins, preferably containing from 0.5 to 5% by weight of free phosphate based on soybean-origin proteins, still preferably a phytic acid decomposition product.
