Abstract:
The present invention addresses the problem of blending cacao butter into a non-temper type chocolate containing a laurin-based hard butter and thus providing a chocolate-like food having good taste and flavor and high resistance against blooming. A laurin-based hard butter composition that contains a random transesterified fat or oil having an appropriately controlled fatty acid composition.
