Abstract:
According to the present invention, since leading ends of supply pipes 4 and 22 that supply vapor into a liquefying tank 2 are connected to a bottom section of the liquefying tank 2, a raw material M can be efficiently heated with vapor that floats up through the raw material from the bottom section of the liquefying tank 2. The liquid surface Ma of the raw material M is not in contact with the supply pipes 4 and 22 through which the vapor passes, whereby scorching of the raw material M can be suppressed. That is, even if the raw material M is boiled at a high temperature, a liquefied raw material L without scorching can be obtained. Rice wine with a favorable flavor can be fermented by using the liquefied raw material L without scorching.
