Abstract:
Low-calorie oils having the same structure as natural oils, being usable in cooking by heating, being in the form an oil at ordinary temperatures and having a high safety which contain triglycerides comprising the triglycerides (SUS, SUU and SSU) respectively represented by formulae (1), (2) and (3), characterized by satisfying all of the following four requirements: 1) containing SUS and SUU in a total amount of 70% or more; 2) containing SUS in an amount of 10% or more; 3) containing SUS and SSU in a total amount of less than 30%; and 4) containing polyvalent unsaturated fatty components in an amount of 40% or more based on the total fatty acid content.
