Abstract:
The present invention relates to a meat analogue exhibiting anti-bacterial, anti-viral, and anti-inflammatory activity and can provide a meat analogue, prepared using proteins isolated from soybeans or wheat, having improved palatability by mixing bovine, porcine, or chicken blood or hemoglobin isolated from the blood with the proteins. In addition, the meat analogue can provide the same level in texture and taste as meat and can be used as a diet food that supplies essential amino acids.
