Abstract:
The present invention relates to a meat substitute and a preparation method therefor, and a method for testing performance of a refrigeration device. The meat substitute for performance test of a refrigeration device is a compound colloid formed of at least one of xanthan gum, agar, and sodium alginate, and carrageenan and a solvent. At least one of xanthan gum, agar, and sodium alginate is selected to form the compound colloid together with carrageenan and the solvent. According to the properties and interaction force of the colloid, the colloid is more stable in gel-forming property and is not easily affected by external conditions. Therefore, the defect of a single colloid is overcome, the formed compound colloid has the advantages of being good in elasticity, good in stability, low in dehydration property, good in repeatability, easy to operate, and the like, and the freezing curve of the formed compound colloid satisfies the freezing pattern of meat. Therefore, the meat substitute serves as a sample for performance evaluation of the refrigeration device, and solves the problems in the prior art that when gelatin is used as a test sample, the operation is not easy and the accuracy is low.
