Abstract:
A method and a device for mincing frozen meat or carcass meat into desired sizes of stick-shaped or die-shaped fine pieces, comprising a cutter mounting member (21) having a number of cutters (23) and formed of a disk rotatable about a center axis thereof and a feeding member supplying meat lump to a disk surface of the cutter mounting member (21), wherein a number of cutters (23) are disposed on a spiral virtual line drawn on the disk sequentially at specified intervals, the amount of radial displacement of the cutters adjacent to each other on the spiral virtual line is up to the width of the cutters, and a cutting member (41) to cut fine pieces of meat being minced by the cutters (23) on the cutter mounting member (21) in lateral direction of these pieces is installed opposedly to the disk surface on the side opposite to the feeding member side of the cutter mounting member (21).
