Abstract:
Provided is a method for efficiently preparing a starch-lipid complex. The method uses corn starch and fatty acids as raw materials, β-lactoglobulin as an emulsifier, and mixes all three materials at a mass ratio of 20:1:2. A complexation reaction is then carried out in a rapid visco analyzer. Compared with the conventional system without β-lactoglobulin, the present method can significantly increase the yield of the starch-lipid complex. The increased rate of the complex content in different fatty acid systems is different (28-283%). The starch-lipid complex obtained by the method of the present invention can be used as an additive for low-glycemic foods, controlled release carriers for targeted drugs, and for improving intestinal flora and human health. The starch-lipid complex can also be added to foods as a fat mimetic, has potentially unique functional properties and high nutritional value, a low production cost, is easy to to continually produce, and causes no pollution to the environment. The starch-lipid complex also has broad market potential and good social and economic benefits.
