Abstract:
FAOD (fructosylamino acid oxidase) is reacted with a sample containing a saccharification protein after or while treating the sample with protease XIV or a protease derived from the genus Aspergillus to determine the amount of oxygen consumed in the FAOD reaction or the amount of the reaction product, thereby assaying saccharification protein. According to the above method, the saccharification protein is fragmented by the above protease while inhibiting the decomposition of degradation of FAOD per se, thus facilitating bonding of the protein to FAOD, which improves the detection sensitivity.
