Abstract:
A method whereby a food is sterilized and dewatered within a short time to thereby sustain its taste for a long time. Ethanol is sprayed onto the food while pressurizing by feeding nitrogen gas into a dryer wherein the pressure has been reduced in the evacuation step. Thus, the oxygen gas contained in the texture of the food is also replaced by the nitrogen gas and the food is consequently prevented from oxidation. At the same time, the ethanol well permeates into the food, which is thus sterilized. Next, the nitrogen gas is drawn from the dryer and the food is heated with far-infrared rays under reduced pressure. Thus the decrease in the material temperature due to the evaporation of the moisture is suppressed and the material temperature is maintained even at the center of the food. Consequently, the evaporation of the moisture under reduced pressure is promoted and the moisture within the food can be removed within a short period of time to thereby give a semi-dried food. The combination of the sterilization with dewatering contributes to the prolongation of the shelf life of the food. Since the material temperature is maintained at a low level during the dewatering treatment, the food suffers from no change in the color or taste, thus sustaining its deliciousness.
