Abstract:
Provided is a method for the fractional purification of Maillard reaction intermediates, characterized in that the method comprises: separating a Maillard reaction intermediate having a specific molecular weight range from the Maillard reaction intermediates by means of a membrane separation process. Further provided are Maillard reaction intermediates obtained therefrom and the use thereof. The Maillard reaction intermediates with different molecular weights obtained from the membrane separation contain different components, and all have respective characteristics in terms of the heat cracking temperature during heat-cracking and a fragrant ingredient released by cracking, which can achieve the directional control of the cracking temperature and the fragrant ingredient released by cracking to a certain extent, so as to control the flavor type and smoking effect of the Maillard reaction intermediates.
