Abstract:
A method for improving anthocyanin stability, comprising the following steps: 1) adding a starch into an aqueous hydrochloric acid solution, adding anthocyanin into the obtained starch solution, and carrying out a treatment in an ultrahigh pressure condition on the obtained system; and 2) storing the mixture obtained after the ultrahigh pressure treatment at a low temperature.
