Abstract:
A method for increasing the content of methylthiopropionaldehyde in processed cheese, comprising the following steps: heating and melting the raw material cheese to obtain a semi-fluid cheese, and adding a leavening agent to adjust the pH value to 6-7; stirring and mixing papain and the semi-fluid cheese, standing for enzymolysis for 10-30 min to obtain a sulfur-containing compound, adding butter, skimmed milk powder, fructo-oligosaccharide, and water, and mixing to obtain a mixed material; heating and stirring an emulsifying salt, gellan gum, table salt, and the mixed material to obtain an emulsified material; mixing glutamine transaminase with the emulsified material, and performing heat treatment at 85-95°C for 10-20 min to obtain a cheese pre-material; and standing and drying the cheese pre-material to obtain the processed cheese. The method can increase the content of methylthiopropionaldehyde in the processed cheese, change the flavor of the cheese, and improve viscoelasticity.
