Abstract:
A method for manufacturing baked confectionery according to one aspect of the present invention comprises: a preparation step of spreading a granular oil/fat composition and a saccharide onto the bottom surface of a baking pan and placing a dough on the granular oil/fat composition and the saccharide, to prepare a baking pan containing raw materials; a baking step of heating the baking pan containing the raw materials to melt the granular oil/fat composition and the saccharide while baking the dough; and a cooling step of solidifying, after the baking step, the melted granular oil/fat composition and saccharide to form a coating on the surface of the baked dough. The mass ratio of the saccharide to the granular oil/fat composition before baking is 0.3-2.7. The value obtained by dividing the mass of the granular oil/fat composition by the bottom surface area of the baking pan is 0.04-0.24. The value obtained by dividing the total mass of the granular oil/fat composition and the saccharide by the bottom surface area of the baking pan is 0.15-0.45.
