Abstract:
The present invention relates to a method for manufacturing pickled vegetables using Chujae number 2 raw mushrooms and pickled vegetables, manufactured by the method using Chujae number 2 raw mushrooms, wherein the method comprises the steps of: immersing slices of blanched Chujae number 2 raw mushrooms in kelp broth; taking out the immersed slices and dehydrating and dry-aging same; and adding a pickling solution to the dry-aged slices, followed by pickling same.
