Abstract:
Provided is a method for manufacturing water-soluble saccharides in which a polysaccharide can easily be decomposed into water-soluble saccharides. This method manufactures water-soluble saccharides from a substance for treatment that contains polysaccharides, wherein after an accommodating container (2) in which the substance for treatment is sealed is in a state filled with ultrahigh temperature and high pressure steam, the substance (t) for treatment undergoes blasting treatment. If blasting is carried out after adjusting the container in which the substance for treatment is sealed to a state filled with ultrahigh temperature and high pressure steam, water-soluble saccharides can be produced from the polysaccharides in the substance for treatment just by blasting. Furthermore, when the blasting is carried out, the air in the container suddenly expands; therefore, the blasted substance suddenly cools. Thus, excessive decomposition of monosaccharides contained in the water-soluble saccharides that are produced can be prevented. Therefore, water-soluble saccharides can be simply and reliably manufactured and recovered.
