Abstract:
The present invention relates to the technical field of probiotic tofu, and in particular sets forth a method for preparing jackfruit probiotic lactone tofu. The method for preparing jackfruit probiotic lactone tofu is characterized in comprising the following steps: S1, preparing jackfruit seed paste; S2, mixing; S3, homogenizing; S4, sterilizing; S5, cooling and fermenting; and S6, adding a coagulant. Compared with the existing technology, nutrient-rich jackfruit probiotic lactone tofu containing a large amount of Bacillus coagulans is prepared by using the nutrition of jackfruit seeds and the proliferation capability of Bacillus coagulans in fermentation.
