Abstract:
The invention relates to a method of preparing meat derivatives, such as sausages. The inventive method is characterised in that it comprises the following steps consisting in: elongating the starting product; cutting the starting product into a plurality of essentially-cylindrical, single-portion segments that are perpendicular or essentially perpendicular to the central axis (e) of the product, with a slight angle of inclination in relation thereto; and inserting all of the aforementioned portions (2) into a casing (3) of natural or artificial origin, thereby producing a single end product (1).
