Abstract:
A method for preparing an oxidized saccharide composition according to one embodiment of the present invention comprises the steps of: (a) obtaining a reaction product-containing solution by adding 0.05-0.5% (v/w) of glucose oxidase and 0.05-0.25% (w/v) of catalase, relative to the total weight of solid saccharide, to a saccharide composition solution and performing enzymatic oxidation reaction for 15-30 hours under a temperature condition of 30-50℃ and a pH condition of 6-8; and (b) obtaining an oxidized saccharide-containing composition solution by heat-treating the reaction product-containing solution to inactivate enzymes, and then cooling and filtering same. By preparing the oxidized saccharide composition by means of the method in accordance with one embodiment of the present invention, gluconic acid, fructose oxide, a fructolysis product and the like are produced by means of an enzymatic oxidation reaction of the saccharide composition used as a raw substrate, and the oxidized saccharide composition exhibits a significantly higher antioxidant activity than a value predicted from respective antioxidant activity values of glucose, fructose and gluconic acid which are single substances, by means of the overall synergy effect of the gluconic acid, fructose oxide, fructolysis product, and unreacted glucose, fructose and the like.
