Abstract:
Disclosed is a method for processing mixed vegetables with improved green color and physical properties as well as long-term storage of 6 months or more at room temperature and refrigeration conditions, and a processed product of mixed vegetables using same. The method for processing mixed vegetables according to the present invention comprises the steps of: (a) preparing first vegetables and second vegetables different from the first vegetables; (b) blanching the first vegetables; (c) measuring the blanched first vegetables and the second vegetables; (d) putting the measured mixed vegetables and filling water into wrapping paper, and packaging same; and (e) sterilizing the packaged mixed vegetables, wherein the first vegetables include green vegetables.
