Abstract:
The present invention relates to a method for producing aged ginger, more specifically to a method for producing aged (black) ginger having optimized active constituent content and biological activity. According to the present invention, black ginger having optimized active constituent content and biological activity can be obtained without the loss of active constituents of fresh raw ginger.
