Abstract:
The purpose of the present invention is to provide a method for producing a potato beer having excellent taste and flavor compared to existing potato beers and having a similar taste and flavor to existing conventional beers. The present invention provides a method for producing a beer using potatoes, the method comprising: a step for mixing potato starch, an enzyme, and water to produce potato mash; a saccharification step for mixing malt grist, a chloride, the potato mash, and water to obtain wort; a filtration step for removing impurities in the wort; a boiling step for adding hops to the filtered wort and boiling; a cooling step for cooling the boiled wort; a fermentation step for adding yeast to the cooled wort to perform alcoholic fermentation; and an aging step for recovering the yeast from the fermented wort and then aging.
