Abstract:
The present invention provides a method for producing various types of carotenoids each having 50 carbon atoms by desaturating carotenoids each having 50 carbon atoms with high efficiency, said method being comprising culturing a cell that is transformed with a mutant phytoene desaturase gene in a culture medium and obtaining carotenoids each having 50 carbon atoms from the culture. The mutant phytoene desaturase gene is produced by introducing a mutation so as to encode a mutant phytoene desaturase of which the activity of desaturating a carotenoid-skeleton compound having 50 carbon atoms is enhanced.
