Abstract:
A method for producing a cream by subjecting a solution of interest, which is separated from milk and contains a separated cream, to a sterilization treatment and a homogenization treatment to thereby produce a cream, said method comprising: a sterilization step of heating the solution of interest; a first homogenization step of homogenizing the solution of interest at 50 to 95°C; a second homogenization step of homogenizing the solution of interest at 50°C or higher, said step being carried out subsequent to the first homogenization step; and a dissolved gas reduction step of degassing the solution of interest at a degassing temperature of 50 to 95°C under a negative pressure, i.e., a degassing pressure of -0.025 to -0.003 MPa, to reduce a dissolved gas, said step being carried out at least prior to the sterilization step and the second homogenization step. In the method, the solution of interest is never subjected to bubbling, and at least the dissolved gas reduction step and each of the sterilization step and the second homogenization step, which is carried out subsequent to the dissolved gas reduction step, are carried out in a series of hermetically closed systems which are filled with the solution of interest.
