Abstract:
A method for producing a fermented beverage, the method being characterized in that: treated hops is added from a sealed container to a raw material liquid, the treated hops being obtained by treating hops-containing water at a temperature of 100-130°C, preferably 105-125°C, at a pressure of 0.01-0.36 MPa in the sealed container; and fermentation is then induced by adding yeast. The present invention makes it possible to more easily extract the bitter components and aroma components from hops and to provide a new flavor as a luxury item.
