Abstract:
The present application relates to a method for producing a fermented composition and, more particularly, to a method for producing a fermented composition with improved odor comprising the steps of: preparing a grain powder; primarily fermenting the grain powder using yeast; secondarily fermenting the primarily fermented product using a strain of Bacillus subtilis; and obtaining the secondarily fermented product. The fermented composition of the present application has a high content of low molecular weight peptides, which can increase the digestibility and absorption rate of proteins upon ingestion, as well as improved odor particular to the fermented product, which can improve palatability.
