Abstract:
Provided is a method for producing a fermented milk product using as the starting material an edible sterile full-fat soybean powder having a very high nutritional value and a markedly improved taste evaluation that includes flavor and smooth texture. Also provided is a fermented milk product produced by the method. The method comprises the following: a step for producing a sterile full-fat soy powder having a particle size of 100 to 1,000 mesh by using the method of separating soybeans into cotyledons, embryo buds, and shells and crushing sterile shelled soybeans brought to a bacteria count of 300 bacteria/g or less; a step for adding water to the sterile full-fat soybean powder to produce a powdered soy juice and then heating and disinfecting the powdered soy juice; a step for homogenizing the powdered soy juice and obtaining homogenized powdered soy juice; and a step for adding lactic acid bacteria to the homogenized powdered soy juice and obtaining a fermented milk.
