Abstract:
Provided is a method for producing a fermented milk whereby a fermented milk with a high concentration that has excellent flavor and texture can be produced at a low cost. The method for producing a fermented milk with a high protein concentration comprises using a starting milk material that contains a skim milk powder, a whey protein concentrate and a milk protein concentrate, wherein the skim milk powder, the whey protein concentrate and the milk protein concentrate are blended so that, when the total amount of proteins contained in the skim milk powder, the whey protein concentrate and the milk protein concentrate is regarded as 100 mass%, the amount of proteins contained in the skim milk powder is 20-60 mass%, the amount of proteins contained in the whey protein concentrate is 20-30 mass% and the amount of proteins contained in the milk protein concentrate is 20-60 mass%.
