Abstract:
[Problem] To provide a fry noodle mass that, upon having been sealed in a cup-form container, experiences minimal incidence of being flipped over within the cup due to external impact. [Solution] According to the present invention, a pregelatinized noodle strand group is accommodated by a retainer in which an upwardly protruding part is provided to the center portion of the bottom surface, the lower portion of a post-noodle-strand-group-accommodation mold is immersed in fry oil, and the lower portion of the noodle line group is subjected to a frying process for a prescribed amount of time, after which the entirety of the retainer is immersed in the fry oil and subjected to a frying process to produce a fry noodle mass. The fry noodle mass can be suitably used as a fry noodle mass for cup-contained instant noodles that are sealed in a cup-form container.
