Abstract:
The present invention addresses the problem of providing a method for producing a purified Salacia genus plant extract while preventing a large decrease in the collection yield of salacinol due to purification to thereby give a purified Salacia genus plant extract in which the salacinol concentration of the extract is maintained and the flavor (odor and bitterness) is improved. The present invention provides a method for producing a purified Salacia genus plant extract, said method comprising treating an extract of a starting material containing a Salacia genus plant, said starting material comprising at least one member selected from a Salacia genus plant, a Salacia genus plant extract and a ground Salacia genus plant, with 40-90 mass%, per 100 mass% of the extract of the starting material containing a Salacia genus plant, of a protein or a protein decomposition product in the presence of an extraction solvent.
