Abstract:
The present invention relates to a method for producing γ-aminobutyric acid (GABA) by a biotransformation process using glutamate or glutamic acid as a substrate. According to the present invention, by adding, during a reaction, a solid acid which does not dissolve in a reaction medium, so as to match the pH appropriate for the activation of an enzyme, glutamate decarboxylase, γ-aminobutyric acid is effectively produced without generating salt, whereas salt generation is a problem with conventional pH control agents. As the solid acid can easily be removed through filtering or centrifugation after a reaction, the conventional complicated salt-removing process is obviated by the present invention. Therefore, the purification process is simplified and a more economical and effective production of γ-aminobutyric acid is possible.
