Abstract:
The purpose of the present invention is to soften a hard peach while ensuring a high juice extraction yield. The present invention provides a method for softening a hard peach characterized by comprising the steps of: (1) storing a hard peach at a temperature of 8-18°C; and (2) storing the hard peach at ordinary temperature after storage in Step (1).
